The answers have a lot to do with search engines and increasing your chances of meeting as many people as possible.

First let me answer why you have to register with each site. Each site has its own domain name and its own domain address. Think of it like a house having its own address. If there are 3 houses, there will be 3 different addresses for each house. It may not be the ultimate protection, but in most cases you will lock the doors at night for peace of mind before going to bed.

Each website has its own address and to have access to personal data, you have to register. If I gave all visitors access without registering, than abuse would be uncontrollable. I would have no way to trace the abuse if it occurs (spammers would love that). There is still no guarantee that abuse will not occur, but at least I'm not going to make it any easier than I have to. It is like locking your doors at night on your house. It may not keep a determined criminal out but you are not going to let your door unlocked at night for every Tom, Dick or Harry to come in while you are sleeping and dreaming about finding love. The same with sites that houses personal data. It may not keep a determined spammer/hustler out, but registeration does deter a lot of people from causing problems and when a problem does occur, I may be able to determine who caused the problem and ban them from causing any more problems.

Why join more than one site? That's easy, it increases your chances to meet that special someone. There is a theory behind this madness and it has to do with how search engines work. When you search in google, you type in certain search terms in hopes of finding what you are looking for. In webmaster talk, these search terms are called keywords. Each site has the potential to be found on different keywords. What this means is that one site could be found on certain keywords that another site would not be found on. Since we never know what search terms a person may be using to find love, the more sites you belong to as a member, the more chances of you being found by others searching for love using different keywords. There is more technical jargon, but I will leave it at that.

Those who complain my first thought is laziness and a close second is you will never make it through the government paperwork to get your loved one to your country if you can't handle simple registration on different sites. Nothing says you can't create the same username and password for each site (unless someone else already took the username you wanted) to make it easier to remember your log in codes.
